Eggplant Calzone

The vegetarian madness continues! Leah and I just sat down to a meal of delicious, made from-scratch eggplant calzones.They were big AND delicious (just like me). Behold:











I got the recipe out of a vegetarian cookbook that I'm currently thumbing through. One good thing about going "green" is that it's forcing me to ACTUALLY COOK again. My mother and I talked about this a little bit today. Too often people just micro-nuke the same (gross) thing over and over. Take the time to chop a few vegetables why don't-cha! It's good for you.

So good I forgot all about meat.

It was mega-super easy. I didn't post the recipe because I was lazy. But all you do is make some dough (get one of those dry yeast packets and add water +a pinch of sugar). Wait for your yeast mix to get frothy (15 min) then add it to 2 cups of flour and a teaspoon of salt. Add a tablespoon of olive oil. Mix all that up and knead it.

Let dough rise for an hour and a half.

While it's doing it's thing, peel and cube an eggplant. Chop up a tomato or two. Chop up some green onion. Once your dough is nearly ready, brown the onions in a little olive oil and garlic. Add in the eggplant and tomato. Once the eggplant is brown and soft cut the heat off.

Split the dough in 1/2 and roll out two circles (get as close as you can, I did a shitty job). On each circle, add the filling. I also cubed up some mozzarella cheese. Put those on top of the mix.

Wet the edges of the dough and fold it over, making a 1/2 moon shape. I used a fork to mash down the edges (thanks Leah!). Brush a little olive oil on top and bake at 425 degrees for about 15-20 minutes (until brown).

AS SOON AS YOU GET THEM OUT OF THE OVEN--sprinkle a little Parmesan cheese.

One thing I didn't do that I think I might do next time is heat up a little marinara sauce (for dipping). Also, there was a lot of filling, but there was also a lot of bread. The recipe said it served two, but I think I might try making three next go-round.

They were good. It's so easy a (lime)MONKEY can do it!!!

Also: wash your damn hands when you cook. Nothing makes me gag more than when I see *someone* cook and they haven't washed up. Wash. Your. Hands.

I have cut and pasted this recipe for printing and getting food preparation smears all over it. Sounds good--I tried to make baba ganoush (sp?) several months ago, but was not impressed with the results.

Yes! Me and Leah just found a recipe for baba ganoush! I was going to try and make that sometime soon.

What went wrong Terri? Not enough Baba, or was there something wrong with the ganoush?

Leah likes Indian (curries and such) so I've tried doing that a few times, and it always turns out wrong. Anyway, let me know if you make the calzones, and how they turn out.

I had to make babaganoush at the restaurant/bakery I worked at..

mushing up baked eggplant by hand was disgusting!!!

even wearing gloves it was gross.

I think there's quite a variation in curries. I know when I do a curry at home--I use TABLEspoons of it. I'm generous with it to give it the kick that Keith likes.
